Transform your rice cooker with this effortless Hainanese chicken recipe, a flavorsome dish from southern China. Simply combine chicken and aromatics in the cooker, let it do the work, and serve with an array of delicious dipping sauces.
Ingredients:
  • 4 small chicken thigh cutlets, skin on (see notes)
  • 84.00 gm light soy sauce
  • 625ml (2 1/2 cups) Organic Chicken Liquid Stock
  • 500g (2 1/2 cups) long-grain rice, rinsed
  • 2cm-piece fresh ginger, peeled, thinly sliced
  • 4.00 garlic cloves, crushed
  • 1 green shallot, cut in half crossways
  • Sliced Lebanese cucumber, to serve
  • 60ml (1/4 cup) vegetable oil
  • 2 green shallots, finely chopped
  • 1 tsp finely grated fresh ginger
  • 2.00 tsp sesame oil
  • 40.00 gm caster sugar
  • 20.00 ml sambal oelek
  • 21.00 gm fresh lime juice
  • 20.00 gm caster sugar
Instructions:
  • Marinate the chicken in soy sauce in a glass bowl for 10 minutes.
  • While your main dish cooks, prepare the shallot sauce. Warm the vegetable oil in a small frying pan over gentle heat for 1-2 minutes until warm but not smoking. Take the pan off the heat, then mix in the shallot and ginger. Allow the mixture to cool briefly, then blend in the sesame oil. Transfer the sauce into a small bowl.
  • Add the stock, rice, ginger, garlic, and shallot to a 1.75L (7 cup) rice cooker. Place the chicken on top, cover with lid, and cook until the rice cooker switches to the Keep Warm setting. Let it sit on this setting for 5 minutes after cooking for about 20-25 minutes.
  • As the rice simmers, mix together the chili sauce ingredients in a small bowl and the soy dipping sauce ingredients in a separate bowl.
  • To serve, generously layer the chicken rice with refreshing cucumber, aromatic shallot sauce, spicy chilli sauce, and savory soy dipping sauce.
