Create a delicious spice cake in under an hour by combining flour, spices, and fruit in a rice cooker.
Ingredients:
  • cooking spray
  • 1 cup all-purpose flour
  • 0.33333334326744 cup white sugar
  • 2 teaspoons baking powder
  • 1.5 cups bran flakes, crushed
  • 1 cup skim milk
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons ground nutmeg
  • 1.5 teaspoons vanilla extract
  • 0.5 cup diced apple
  • 0.5 cup diced banana
  • 0.33333334326744 cup raisins
Instructions:
  • Grease the rice cooker bowl with cooking spray.
  • In a bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate large bowl, mix bran flakes, milk, cinnamon, nutmeg, and vanilla extract; let the bran flakes soak in the milk for about 5 minutes. Add egg and oil to the bran mixture and stir well. Finally, gently mix in the flour until just combined.
  • Fold the apple, banana, and raisins delicately into the batter, then transfer the mixture into a greased rice cooker.
  • Bake in the rice cooker for 3 cycles or until a toothpick inserted in the center comes out clean, approximately 30 minutes.
