Whip up a quick and delicious Hainanese chicken rice for dinner.
Ingredients:
  • 8 green onions
  • 2 x 4cm pieces ginger
  • 1.5kg whole chicken, rinsed
  • 400g rice
  • 60ml peanut oil
  • 3.00 gm sesame seed oil
  • 20.00 ml Shaoxing rice wine
  • Coriander sprigs, to serve
  • Soy sauce, to serve
  • Red chilli, sliced, to serve
Instructions:
  • Slice 4 green onions into 5cm pieces and slice 1 piece of ginger. Add them to a large saucepan and fill it 3/4 full with water. Boil over medium heat. Place chicken breast side-down in the pan and bring to a boil. Cook for 15 minutes. Turn off heat, cover with a lid, and let the chicken sit for 2 hours to finish cooking. Remove chicken, strain cooking liquid, and save 3 cups - freeze any leftovers for up to 1 month.
  • Rinse the rice in a sieve under cold running water until the water runs clear. Combine the rice and reserved stock in a saucepan, bring to a boil over medium heat, cover, reduce heat to low, and cook for 15 minutes. Remove the pan from the heat, let it stand covered for an additional 10 minutes.
  • While using a heavy knife or cleaver, cut the chicken into small pieces or remove the meat from bones and then cut it. Place the chicken in a serving bowl. Slice the remaining green onions thinly and grate the remaining ginger finely, then combine them in a heatproof bowl. Heat the combined oils in a small frying pan over medium heat until smoking, then immediately pour them over the green onion mixture. Stir in the rice wine. Drizzle the chicken with the green onion sauce and garnish with coriander sprigs. Serve with rice and small bowls of soy sauce and red chili.
