Quick and flavorful Hokkien noodle stir-fry with chicken and vegetables.
Ingredients:
  • 18.20 gm olive oil
  • 500g chicken breasts, trimmed, sliced
  • 5cm piece fresh ginger, peeled, thinly sliced
  • 2 garlic cloves, sliced
  • 300g broccoli florets
  • 6 green onions, sliced diagonally
  • 1 red capsicum, sliced
  • 250g packet hokkien noodles
  • 76.25 gm fish sauce
  • 42.00 gm lime juice
  • 1 to 2 birdseye chillies, deseeded, sliced
  • 21.00 gm reduced-salt soy sauce
  • 125.00 ml coriander leaves
Instructions:
  • Preheat a wok over high heat until it sizzles. Cook half of the chicken in 1 teaspoon of oil until golden, about 1 minute. Transfer to a plate and repeat with the remaining chicken. Cover to keep warm.
  • In a hot wok, combine the remaining oil, ginger, garlic, broccoli, onions, and capsicum. Stir-fry for 3 minutes or until the broccoli and capsicum are tender. Then, add the noodles and stir-fry for an additional minute.
  • Mix together the fish sauce, lime juice, chillies, and soy sauce in a jug. Pour the mixture into a wok with chicken. Stir-fry for 1 to 2 minutes until the dish is heated through and well blended. Divide the stir-fry among serving bowls, sprinkle with coriander, and serve.
