Enhance your dishes with the bold and vibrant flavor of ginger.
Ingredients:
  • 5cm piece fresh ginger, peeled
  • 150g butter, softened
  • 2 eggs
  • 225.00 gm self-raising flour, sifted
  • 2.00 gm baking powder, sifted
  • 1.25 gm ground cinnamon
  • 84.98 gm milk
  • 167.50 gm golden syrup
  • Custard, to serve
Instructions:
  • Grease a 6-cup pudding basin with its lid. Cut a circle of baking paper using the lid as a template. Set aside.
  • Grate 1cm of fresh ginger finely and slice the rest into matchsticks. (see note)
  • With an electric mixer, whip together butter and sugar until they are airy and soft. Add the eggs one by one, ensuring each one is well incorporated. Mix in the grated ginger. Gradually sift half of the flour, baking powder, and cinnamon over the butter mixture, stirring until just combined. Pour in half of the milk, stirring well. Repeat with the remaining flour, baking powder, cinnamon, and milk, stirring until the batter is smooth.
  • In a bowl, mix golden syrup and sliced ginger. Spread the mixture in the bottom of a prepared basin. Pour the batter over the top and smooth the surface. Cover with baking paper and secure with a lid. Place an inverted saucer in a large saucepan, then place the basin on top. Fill the saucepan with boiling water until it reaches halfway up the sides of the basin. Cover and bring to a simmer over medium heat, then reduce to medium-low heat and gently simmer for 1 hour and 30 minutes, adding more boiling water as necessary.
  • Gently remove basin from saucepan, take off the lid and paper, then carefully invert pudding onto a serving plate. Enjoy with custard.
