Cozy up with pear and ginger puddings for a winter treat.
Ingredients:
  • 425g can pear halves
  • 185g chopped unsalted butter
  • 161.25 gm caster sugar
  • 53.60 gm golden syrup
  • 300.00 gm sifted self-raising flour
  • 20.00 ml finely chopped ginger in syrup
  • 84.98 gm milk
Instructions:
  • Preheat your oven to 200°C. Lightly grease 8 ovenproof ramekins. Slice the pear halves from a 425g can and place them at the base of each ramekin.
  • Cream together 185g chopped unsalted butter, 3/4 cup caster sugar, and 2 tablespoons golden syrup until light and fluffy. Incorporate 3 eggs one at a time, beating well after each addition. Gently fold in 2 cups sifted self-raising flour, 1 tablespoon finely chopped ginger in syrup, and 1/3 cup milk.
  • Transfer the mixture into ramekins and bake on an oven tray for 20 minutes until golden. Unmold onto plates and garnish with cream. For freezing, let the cooked puddings cool, then wrap them individually in plastic and foil. To enjoy later, simply defrost and warm in the microwave.
