Indulge in a decadent dessert after a busy week.
Ingredients:
  • 1 x 2L ctn vanilla ice-cream, softened
  • 1 x 125g pkt glace ginger, chopped
  • 3 x 567g cans lychees in syrup
  • 125.00 ml shredded fresh mint
Instructions:
  • In a large bowl, mix the ice cream and ginger together. Transfer the mixture to an 11 x 21cm loaf pan, cover with foil, and freeze for 2 hours until firm.
  • In a large bowl, mix the lychees and mint together. Cover with plastic wrap and let it chill in the fridge to enhance flavors.
  • Transfer the ice-cream onto a clean work surface to slice it thickly. Serve by dividing the slices onto individual plates and topping them with minted lychees.
