Try these elegant gingersnap and lemon cheesecake bars for a refreshing twist on a classic dessert. Enjoy chilled.
Ingredients:
  • 2 eggs
  • 1 (16 ounce) package gingersnap cookies, crushed
  • 0.33333334326744 cup brown sugar
  • 0.25 cup butter, melted, or as needed
  • 1 tablespoon ground ginger
  • 2 (8 ounce) packages cream cheese, softened
  • 0.5 cup white sugar
  • 0.25 cup lemon juice
  • 2 teaspoons lemon extract
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine cookies, brown sugar, butter, and ground ginger in a bowl, then press mixture into the bottom of a 9x13-inch baking dish.
  • Bake in the preheated oven for 6 to 8 minutes until lightly browned. Allow the crust to cool to room temperature before proceeding.
  • Combine cream cheese, eggs, white sugar, lemon juice, and lemon extract in a food processor until velvety and luscious; evenly spread over the crust.
  • Bake in the oven until the cheesecake is firm, for 25-30 minutes.
  • Let the cheesecake cool to room temperature and then chill in the refrigerator for about 1 hour.
