Transform sugar cookie mix into a prize-winning ginger cookie with a blend of spices and molasses.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup shortening
  • 1/4 cup mild-flavor (light) molasses
  • 1 tablespoon ground ginger
  • 1 1/4 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 egg
  • 1 cup powdered sugar
  • 1 teaspoon grated lemon peel
  • 4 teaspoons lemon juice
  • 1/4 cup finely chopped crystallized ginger
Instructions:
  • Preheat oven to 375°F. Mix cookie ingredients in a large bowl until a soft and sticky dough forms.
  • Drop dough onto baking sheets without greasing, using a 1 tablespoon cookie scoop or by spoonfuls, spacing them 2 inches apart.
  • Bake for 8 to 10 minutes until edges are lightly golden brown. Let cool for 2 minutes, then transfer to cooling racks. Allow to cool completely for about 30 minutes.
  • Combine powdered sugar, lemon peel, and lemon juice in a small bowl until you have a smooth glaze. Spread this delightful glaze on top of the cookies and finish by sprinkling with crystallized ginger for an extra burst of flavor.
