Impressive, yet easy assembly for this log recipe.
Ingredients:
  • 300ml thickened cream
  • 24.00 gm icing sugar
  • 4.40 gm vanilla extract
  • 250g packet ginger nut biscuits
  • 125.00 ml sweet sherry
  • 50g dark chocolate, shaved, to decorate
Instructions:
  • Whisk together cream, sugar, and vanilla until thickened. Spoon a dollop of the mixture onto the center of a serving plate to anchor the biscuits.
  • Dunk each biscuit in sherry, spread one side with 2 teaspoons of cream, and stack to form a log. Coat the entire log with the rest of the cream. Chill for 6 hours, then garnish with chocolate shavings before serving.
