Quick and effortless dessert ready in under 30 minutes.
Ingredients:
  • 120g biscuit
  • 16.00 gm soft brown sugar
  • 20.00 gm softened butter or margarine
  • 1 egg yolk
  • 6 medium or 8 small ripe apricots, halved, stones removed
  • 10.00 gm caster sugar
  • 185mls (3/4 cup) thickened cream, whipped, to serve
Instructions:
  • Preheat your oven to 180°C and lightly grease a shallow baking dish.
  • Crush the biscuits with a meat mallet or rolling pin between sheets of greaseproof paper until they resemble coarse breadcrumbs.
  • In a bowl, thoroughly mix biscuit crumbs, brown sugar, butter or margarine, and egg yolk. Evenly fill each apricot half with the biscuit mixture.
  • Spread apricots in baking dish. Bake until slightly soft, about 7-10 minutes. Cool for 5 minutes, then sprinkle with caster sugar and serve with whipped cream.
