Paper-baked barramundi with spring greens recipe

Effortless weeknight dinner: Paper-baked barramundi with spring greens ready in 25 minutes.
Ingredients:
  • 2 spring onions, trimmed, cut into matchsticks
  • 4 Ocean Barramundi Portions
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 1 garlic clove, thinly sliced
  • 2 spring onions, extra, trimmed, thinly sliced diagonally
  • 1 long red chilli, thinly sliced (optional)
  • 60ml soy sauce
  • 20.00 ml Chinese cooking wine
  • 20.00 ml malt vinegar
  • 2 tsp sesame oil
  • 1 bunch choy sum, trimmed
  • 2 x 250g pkts microwavable jasmine rice
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Preheat the oven to 200°C. Soak spring onion matchsticks in a bowl of iced water for 10 minutes until they curl. Then, drain.
  • Prepare four 30cm x 45cm pieces of baking paper on your clean work surface. Position one barramundi portion in the middle of each sheet. Sprinkle with ginger, garlic, sliced spring onion, and chilli (optional). Mix soy sauce, wine, vinegar, and oil in a small jug, then evenly drizzle over the barramundi.
  • Fold the 2 long sides of the paper towards the center and seal by folding over twice. Roll up the ends to enclose the barramundi. Place on a baking tray and bake for 10 minutes, or until the barramundi is cooked through.
  • Steam the choy sum over simmering water for 1 minute until vibrant green, then transfer to a bowl of ice water using tongs to refresh.
  • Microwave the rice as instructed on the packet.
  • Arrange the rice, choy sum, and barramundi on serving plates. Garnish with spring onion curls and sesame seeds.
