Delicious baked salmon served with buttered new potatoes, wrapped in paper for a clean and flavorful meal.
Ingredients:
  • 2 (5 ounce) salmon fillets or steaks
  • 2 tablespoons frozen green peas
  • 2 cloves garlic, crushed
  • 2 dashes lemon juice
Instructions:
  • Preheat your oven to a toasty 425°F (220°C).
  • Lay each salmon fillet on a 12-inch parchment paper circle, positioning them 1 inch from the center. Top each fillet with peas, crushed garlic, lemon juice, and olive oil. Fold the paper into packets, sealing by crimping the edges like a pasty. Transfer to a baking sheet.
  • Bake for 15 minutes in a preheated oven until the fish flakes easily with a fork. Serve by placing the packets on plates and cutting open in a cross shape in the center.
