Salmon steamed in paper parcels

Steam salmon in paper parcels with fresh vegetables for a delicious and nutritious meal.
Ingredients:
  • 2 salmon fillets, skinned and boned
  • 120g green beans or round beans, ends trimmed
  • 6 baby carrots, peeled, cut in half (or 2 medium carrots cut into 10cm x 8mm strips)
  • 1 shallot, thinly sliced
  • 1 orange, segments only
  • 1 tsp fresh ginger, chopped fine
  • 62.50 gm white wine
  • 2 sprigs fresh thyme
  • Cracked black pepper
Instructions:
  • Preheat the oven to 200C with a sheet pan inside.
  • Take 2 large sheets of baking paper, approximately 36cm by 50cm, and fold them in half to create two 36cm by 25cm rectangles.
  • Shape the rectangles into half hearts by cutting along the fold to create the center of the heart shape.
  • Spread out the paper hearts and neatly arrange half of the carrots on the right side of each heart.
  • Arrange the beans diagonally over the carrots.
  • Evenly distribute the shallots over the two hearts and surrounding vegetables, then lightly sprinkle everything with fresh cracked black pepper.
  • Season each salmon fillet generously with fresh cracked black pepper. Top each vegetable base with a seasoned salmon fillet and garnish with orange segments on top of each fillet.
  • Blend the ginger with the white wine, drizzle the mixture over the salmon, ensuring the liquid surrounds the vegetables and fish. Top each piece with a fresh sprig of thyme.
  • Fold the left side of each heart over the fish to create a half heart shape. Fold the paper tightly from the top of each parcel, overlapping each fold for an airtight seal.
  • Transfer the two paper packages onto the hot sheet pan and slide it into the oven.
  • Bake for 12 minutes until golden brown and crispy, allowing the paper to puff up as it bakes.
  • After baking, allow the parcels to rest at room temperature for 3 minutes. Gently open the paper packets, mindful of the steam, and plate the vegetables individually.
  • Lay the salmon over the vegetables and drizzle with the flavorful cooking liquid before serving promptly.
