Spiced sponge cake with maple-orange cream filling, the ultimate tea-time treat.
Ingredients:
  • 4 eggs
  • 125.00 ml plain flour
  • 75.00 gm self-raising flour
  • 5.00 gm ground ginger
  • 1.25 gm ground mixed spice
  • 300ml thickened cream
  • 1 tsp finely grated orange rind
  • 40.50 gm maple syrup
  • 12.00 gm icing sugar mixture
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease and line two 20cm round cake pans with baking paper.
  • Beat eggs and caster sugar together until they turn thick and creamy, using an electric mixer for 8 to 10 minutes.
  • Sift flours, ginger, and mixed spice together three times. Carefully fold the flour mixture into the egg mixture until just combined. Divide the mixture between the prepared pans and bake for 20 minutes or until the sponges spring back when touched. Line a wire rack with baking paper and immediately turn the sponges out onto it to cool.
  • With an electric mixer, whip cream, orange zest, and maple syrup until soft peaks form. Transfer the cream to a piping bag with a 1.5cm fluted nozzle. Lay one sponge on a plate, pipe the cream onto the cake, then add the second sponge on top. Sprinkle with icing sugar before serving.
