Ginger-Spiced Almonds

Create irresistible spiced almonds perfect for any occasion by combining with sugar, ginger, and other spices. Feel free to use 5 cups of assorted nuts for variety.
Ingredients:
  • 5 cups blanched whole almonds
  • 1 cup sugar
  • 1 tablespoon grated gingerroot
  • 1 1/2 teaspoons garlic salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon onion powder
  • 2 egg whites
  • 1/3 cup butter or margarine, cut into pieces
Instructions:
  • Preheat oven to 325°F. Spread almonds on a 15x10x1-inch pan and bake for 25 to 30 minutes, stirring occasionally, until lightly toasted.
  • In a small bowl, combine all remaining ingredients except for egg whites and butter; set aside. In a large bowl, whip egg whites with an electric mixer on high speed until soft peaks form. Gradually add the sugar mixture while continuing to beat. Gently fold in the almonds.
  • In the same pan, melt the butter in the oven for 3 to 5 minutes. Spread the almond mixture over the melted butter. Bake for 30 to 35 minutes, stirring every 10 minutes, until almonds are golden brown and all the butter is absorbed. Allow to cool completely for about 1 hour before storing in an airtight container.
