Spiced gingerbread biscuits, ideal for gifting during Christmas.
Ingredients:
  • 125g butter, chilled, chopped
  • 332.50 ml plain flour
  • 66.00 gm almond meal
  • 90.00 gm firmly packed brown sugar
  • 3.75 gm ground ginger
  • 1.25 gm ground cinnamon
  • 1 egg
  • 165.00 gm strawberry jam
Instructions:
  • In a food processor, combine butter, flour, almond meal, sugar, and spices until mixture resembles fine crumbs. Add egg and vanilla, then process until mixture just comes together. Transfer the dough onto a lightly floured surface and knead until smooth. Shape the dough into a disc, wrap it in baking paper, and refrigerate for 30 minutes.
  • Preheat your oven to 170C/150C fan-forced and line 2 large baking trays with baking paper. Roll out the dough between 2 sheets of baking paper until it's 4mm thick. Use a 6cm-round fluted cutter to cut out 36 rounds from the dough. Place them on the prepared trays. If needed, re-roll the dough trimmings. Refrigerate the biscuits for 20 minutes, or until they are firm. Use a 3cm star-shaped cutter to cut small stars from the center of half the rounds.
  • Bake until light golden, about 10 to 12 minutes. Allow to rest on trays for 5 minutes, then transfer to a wire rack to cool.
  • Spread the uncut biscuits generously with jam, then sandwich them with the star cut-out biscuits.
  • Place the biscuits into elegant paper-lined boxes or cellophane bags, then tie with a beautiful ribbon to enhance the presentation.
