Homemade ginger loaf inspired by a popular coffee chain, topped with decadent cream cheese frosting infused with orange and vanilla.
Ingredients:
  • 1 cup applesauce
  • 1 teaspoon orange extract
  • 1 teaspoon baking soda
  • 1.5 cups all-purpose flour
  • 2.25 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon orange extract
  • 2.5 cups confectioners' sugar
  • 2 tablespoons finely chopped crystallized ginger, or to taste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and grease & flour two 9x5-inch loaf pans generously.
  • In a bowl, mix flour, ground ginger, cinnamon, cloves, and salt together.
  • In a large bowl, use an electric blender to cream together sugar and butter until light and fluffy. Stir in 1 teaspoon of orange extract. In a separate bowl, mix baking soda with applesauce, then stir into the butter mixture. Add the flour mixture and mix until batter is smooth. Pour the batter into the prepared loaf pans.
  • Bake in the preheated oven for 40-50 minutes until a toothpick inserted into the center of the loaf comes out clean. Then, cool in the pan on a wire rack for about 1 hour.
  • In a bowl, combine cream cheese, vanilla extract, and 1/2 teaspoon of orange extract. Use an electric mixer to beat until well combined. Gradually beat in confectioners' sugar. Spread the frosting over cooled loaves and decorate with crystallized ginger.
