Baked apricots with ginger loaf

Indulge in a quick and comforting warm dessert topped with luxurious cream.
Ingredients:
  • 4 thick slices (about 1/2 a 515g pkt) Ginger Loaf Cake
  • 1kg tub Brand Apricot Halves in Fruit Juice
  • 1 vanilla bean, split
  • 53.75 gm Brand Caster Sugar
  • 63.13 gm double or thickened cream
Instructions:
  • Preheat your oven to 180C (160C fan-forced), then tightly wrap the cake slices first in baking paper and then in foil.
  • Arrange the apricots in one layer at the bottom of a small baking dish. Pour in half of the fruit juice from the tub and mix in the cinnamon, vanilla, and sugar.
  • Bake cake and apricots for 20 minutes or until warmed. Serve cake slices on plates and top with apricots, syrup, and cream.
