Grilled apricots add a gourmet touch to gingerbread cake, creating a warm and elevated dessert.
Ingredients:
  • 125g butter
  • 167.50 gm golden syrup
  • 135.00 gm brown sugar
  • 187.50 ml plain flour
  • 112.50 gm self-raising flour
  • 5.00 gm ground ginger
  • 1.25 gm mixed spice
  • 1.25 gm bicarbonate of soda
  • 128.75 gm milk
  • 1 egg, lightly beaten
  • 12 apricots, halved, stones removed
  • thick cream, to serve
Instructions:
  • Preheat the oven to 180°C. Grease and line a 7cm deep, 19cm square cake pan. In a saucepan over low heat, combine butter, syrup, and 1/2 cup of sugar. Stir and cook for 5 minutes. Allow the mixture to cool.
  • In a large bowl, sift flours, ginger, spice, and bicarbonate of soda. Add the butter mixture, milk, and egg. Gently stir to combine all ingredients.
  • Pour mixture into the greased cake pan, then bake for 40 to 45 minutes until a skewer comes out clean. Let it rest in the pan for 10 minutes before transferring to a wire rack to cool.
  • Preheat the grill on high. Arrange apricot halves in a shallow, heat-proof dish and sprinkle with the remaining sugar. Grill for 8 to 10 minutes until the sugar has melted. Serve warm with slices of gingerbread and thick cream.
