Quick and delectable gingerbread cookie bars made with sugar cookie mix, molasses, spices, and topped with luscious cream cheese frosting.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/2 cup butter, softened
  • 2 eggs
  • 3 tablespoons mild-flavor (light) molasses
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 6 oz cream cheese, softened (from 8-oz package)
  • 1/3 cup butter, softened
  • 3/4 teaspoon vanilla
  • 2 1/2 cups powdered sugar
  • 1/4 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 350°F and generously coat a 13x9-inch pan with cooking spray.
  • In a medium bowl, combine the Gingerbread Bar ingredients until well blended. Spread the thick mixture evenly in the pan. Bake for 20-23 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely for about 45 minutes.
  • In a large bowl, use an electric mixer to beat cream cheese and 1/3 cup of softened butter on medium speed for 1 to 2 minutes, occasionally scraping the bowl, until smooth and creamy. Mix in vanilla and powdered sugar until the frosting is smooth and spreadable.
  • Smooth the frosting over the cooled bars and gently dust with 1/4 teaspoon of cinnamon. Chill for 1 hour before serving. Cut into 6 rows by 4 rows for perfect servings.
