Whip up gingerbread pancakes with zesty lemon sauce for a delightful and quick brunch treat!
Ingredients:
  • 1 (14.5 ounce) package gingerbread mix
  • 1.25 cups warm water
  • 1 (3.4 ounce) package JELL-O Lemon Flavor Instant Pudding
  • 2.5 cups milk
Instructions:
  • Combine gingerbread mix, water, and egg in a large bowl, stirring until batter is smooth.
  • Preheat griddle or large skillet sprayed with cooking spray over medium heat. Pour scant 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the tops, then flip to brown the other sides.
  • In a microwaveable bowl, whisk together the pudding mix and milk for 2 minutes. Microwave on HIGH for 1-1/2 minutes until heated through, stirring after 1 minute. Serve with warm lemon sauce over pancakes.
