Easy gingerbread cakes with creamy frosting, cooked in a Kmart pie maker for a festive Christmas dessert.
Ingredients:
  • 225g (1 1/2 cups) self-raising flour
  • 155g (3/4 cup) brown sugar
  • 5.00 gm ground ginger
  • 2.50 gm mixed spice
  • 125ml (1/2 cup) milk
  • 125g butter, melted, cooled
  • Ground cinnamon, to sprinkle (optional)
  • 250g tub spreadable cream cheese
  • 24.00 gm icing sugar mixture
  • 10.60 gm fresh lemon juice
Instructions:
  • In a large bowl, sift together flour, brown sugar, ginger, and mixed spice. Create a well in the center. In a separate bowl, whisk together eggs and milk, then pour into the well along with the butter. Gently fold with a large metal spoon until just combined.
  • Preheat the pie maker. Spoon 1/4 cup of the mixture into each hole. Close the lid and cook for 7 minutes. Transfer cakes to a wire rack to cool. Repeat with the rest of the mixture to make 10 cakes.
  • Combine all the ingredients in a small bowl and mix until creamy.
  • Generously coat the cakes with the icing and sprinkle with cinnamon, optional.
