Luscious lemon and ginger pound cake loaf infused with Grand Marnier. Perfect with Earl Grey tea or ice wine.
Ingredients:
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 2 tablespoons brandy-based orange liqueur (such as Grand Marnier®)
  • 3 tablespoons grated lemon zest
  • 1.25 cups buttermilk
  • 0.5 cup fresh lemon juice
  • 0.75 cup white sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease 2 loaf pans to prepare for baking.
  • Combine flour, baking powder, ground ginger, and salt in a bowl. In a separate bowl, mix butter and 2 cups of sugar until creamy, then beat in the eggs. Stir in lemon zest and orange liqueur. Mix in buttermilk. Gradually add the flour mixture while whisking gently. Pour the batter into loaf pans.
  • Bake in the preheated oven for about 50 minutes until a toothpick or small knife inserted in the center comes out clean. Transfer the cakes from the pans to a cooling rack.
  • Combine the lemon juice with 3/4 cup of sugar, whisk until sugar dissolves. Drizzle the mixture over the hot loaves. Let the loaves cool fully before serving.
