Delicious lemon tea loaf with zesty lemon flavor and almond notes, topped with a refreshing lemon glaze. Perfect for family gatherings.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tablespoons lemon zest
  • 0.75 cup Almond Breeze Unsweetened Original almondmilk
  • 0.5 cup canola or vegetable oil
  • 2 large eggs, slightly beaten
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon almond extract
  • 1 cup powdered sugar
  • 1.5 tablespoons fresh lemon juice
  • 3 tablespoons sliced almonds for garnish
Instructions:
  • Preheat your oven to 350 degrees F, then generously coat an 8 1/2 x 4 1/2 loaf pan with cooking spray.
  • Combine flour, salt, and baking powder in a large bowl. In a small bowl, mix sugar and lemon zest, rubbing together until fragrant. Add to the flour mixture and set aside.
  • Combine almond milk, oil, eggs, 1 teaspoon lemon juice, vanilla, and almond extract in a separate medium bowl.
  • Combine wet ingredients into dry mixture gradually while stirring until blended. Transfer batter to prepared loaf pan.
  • Bake for 55-60 minutes until a toothpick comes out clean. Allow the loaf to cool on a rack for 15 minutes, then loosen the sides with a knife and gently slide the bread out of the pan. Cool completely on a wire rack.
  • As the bread cools, prepare the lemon glaze by mixing powdered sugar, 1 1/2 tablespoons lemon juice, and almond extract in a small bowl until smooth. Drizzle the glaze over the lemon almond bread, sprinkle sliced almonds on top, then cut and serve.
