Honey and almond nougat

Impress your loved ones with homemade nougat, perfect for gifting or indulging.
Ingredients:
  • 500g honey
  • 350g blanched whole almonds, roasted
  • 200g (2 cups) fine dried breadcrumbs
  • 2 tsp finely grated lemon zest
  • Pinch of ground cinnamon
  • 4 rice paper sheets (see note)
Instructions:
  • In a heavy-based pan over medium heat, gently simmer the honey for 5 minutes. Add in the almonds, breadcrumbs, zest, and cinnamon. Continue stirring for 5 minutes until a thick consistency is achieved.
  • Prepare a slice tin by greasing it. Line the base with rice paper, trimming it to fit. Spoon in the nougat, spread it evenly, then cover it with another layer of rice paper. Allow it to cool completely. Cut it into small squares and serve.
