Almonds bring a delicious crunch to glazed ham.
Ingredients:
  • 6kg whole leg ham on the bone
  • 250ml orange juice
  • 165g brown sugar
  • 23.40 gm Dijon mustard
  • 175g honey
  • 40.00 ml Grand Marnier or other orange liqueur
  • 40g almond
Instructions:
  • Preheat oven to 180°C. Score the ham shank in a decorative zigzag pattern using a small sharp knife. Remove the skin by sliding your knife under it and gently lifting it off in one piece. Discard the skin.
  • Score the fat of the ham in a diamond pattern using a small sharp knife. Pour 1/2 cup (125ml) of water into a large roasting pan and place a wire rack in the pan. Put the ham on the rack.
  • In a small bowl, mix together orange juice, sugar, mustard, honey, and Grand Marnier to create a glaze. Brush half of the glaze over the ham before baking for 30 minutes or until golden brown.
  • Stir the almonds into the glaze and pour the mixture over the ham. Bake for an additional 15-20 minutes until the almonds are golden and caramelized. Take out of the oven, cover loosely with foil, and let it rest for 15 minutes before slicing.
