Ginger-infused beef meatballs in a luscious pineapple glaze.
Ingredients:
1.5 pounds ground beef
0.66666698455811 cupcrushedsaltine cracker crumbs
0.33333298563957 cupmincedonion
1egg
0.25 cupmilk
1.5 teaspoons ground ginger
1tablespoonolive oil
0.5 cup packed brown sugar
1 (15 ounce) canpineapple chunks - drained, with juice reserved
0.33333298563957 cupwhite vinegar
1tablespoonsoy sauce
0.33333298563957 cupchoppedgreen bell pepper
Instructions:
Combine ground beef, cracker crumbs, onion, egg, milk, ginger, and salt in a large bowl. Roll mixture into meatballs using rounded tablespoonfuls.
In a large skillet over medium heat, sauté meatballs in olive oil until golden brown and fully cooked. Remove and drain any excess fat.
Combine cornstarch, brown sugar, pineapple juice, vinegar, and soy sauce in a small bowl. Stir until smooth. Pour into the skillet with meatballs. Cook and stir until thickened and boiling, about 5 minutes. Add green pepper and pineapple chunks. Heat through before serving.
