Versatile meatballs make a perfect main dish with rice or a crowd-pleasing party appetizer.
Ingredients:
  • 1.5 pounds ground beef
  • 0.66666668653488 cup plain breadcrumbs
  • 0.33333334326744 cup minced onion
  • 0.25 cup milk
  • 1 egg
  • 1.5 teaspoons salt
  • 2 tablespoons cornstarch
  • 0.5 cup brown sugar
  • 1 (15 ounce) can pineapple chunks, juice reserved
  • 0.33333334326744 cup vinegar
  • 0.33333334326744 cup chopped green bell pepper
Instructions:
  • Preheat your oven to 350°F (175°C) to ensure the perfect cooking temperature.
  • Combine ground beef, bread crumbs, onion, milk, egg, and salt in a bowl until fully blended. Shape mixture into balls and place on a baking sheet.
  • Bake the meatballs in the preheated oven for about 25 minutes until nicely browned on the bottom, then transfer them to a slow cooker.
  • Combine cornstarch and brown sugar in a saucepan, then place on low heat. Mix in pineapple juice and vinegar until smooth. Bring to a boil for 1 minute, then pour over meatballs in the slow cooker.
  • Combine the pineapple chunks and green bell pepper in the slow cooker.
  • Slow cook the mixture on Low for 3 to 4 hours until the flavors meld perfectly.
