Whip up a luscious spiced icing for gingerbread cake, perfect for festive occasions!
Ingredients:
  • 1.6666667461395 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1.25 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon Chinese five-spice powder
  • 0.5 cup white sugar
  • 0.5 cup dark molasses
  • 0.5 cup vegetable oil
  • 1 egg, beaten
  • 0.5 cup boiling water
  • 1 cup powdered sugar
  • 0.25 cup lemon juice
  • 1 tablespoon grated lemon zest
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9-inch square baking pan by greasing and lightly flouring it.
  • In a bowl, combine flour, ginger, baking soda, cinnamon, salt, and Chinese five-spice powder. Add sugar, molasses, oil, and egg, mixing until just combined. Slowly pour in boiling water and whisk until batter is smooth and shiny, approximately 1 minute.
  • Gently pour the batter into the prepared baking pan and tap it on the counter to eliminate any air bubbles.
  • Bake in the oven until a toothpick inserted into the center comes out clean, approximately 35 minutes.
  • Combine powdered sugar, fresh lemon juice, and fragrant lemon zest in a bowl, stirring until the sugar is completely dissolved.
  • While the cake is still hot, generously drizzle the lemon juice mixture over it. Use a spatula to evenly spread the mixture across the cake.
  • Allow the cake to cool to room temperature before enjoying.
