Delicious ginger cake with soft lemon icing.
Ingredients:
  • 150g margarine
  • 135.00 gm brown sugar
  • 166.25 gm treacle
  • 178.75 gm honey
  • 2 eggs
  • 176.25 gm sour cream
  • 1 tsp grated fresh ginger
  • 300g self-raising flour
  • 5.00 gm ground ginger
  • 2.50 gm cinnamon
  • 1 tsp allspice
  • 0.63 gm ground nutmeg
  • 1/4 tsp ground cloves
  • 150g icing sugar
  • Juice of 1/2 lemon
  • 82.50 ml crystallised ginger chips
Instructions:
  • Preheat your oven to 180°C. Line the base of a large loaf pan measuring 24 x 10cm and with a depth of 9cm, then lightly grease the sides of the pan.
  • Using an electric mixer, blend margarine, sugar, treacle, and honey for 2 minutes. Slowly add eggs one by one, continuing to mix. Incorporate sour cream, freshly grated ginger, and vanilla.
  • Sift the flour and spices together, gently fold to mix. Transfer the batter into the pan and bake for 45 minutes. Let it cool before serving.
  • Combine icing sugar and lemon juice until a soft icing forms. Drizzle over cake and top with ginger chips for a delicious finishing touch.
