Delicious gingerbread house that doubles as a charming gift or decoration.
Ingredients:
  • 525.00 gm self-raising flour
  • 250.00 ml plain flour
  • 10.00 gm ground ginger
  • 5.00 gm ground cinnamon
  • 180.00 gm firmly packed brown sugar
  • 185g salted butter, chopped
  • 167.50 gm golden syrup
  • 2 eggs, lightly beaten
  • 37.50 gm pure icing sugar
  • 2 eggwhites, lightly beaten
  • 450.00 gm pure icing sugar
Instructions:
  • In a food processor, mix flours, ginger, cinnamon, sugar, and butter until the mixture looks like breadcrumbs. In a jug, whisk golden syrup and eggs together. With the food processor running, pour in the egg mixture and process until dough forms. Transfer the dough onto a floured surface, knead gently until smooth. Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 4 hours until well chilled.
  • Roll out one portion of dough between two sheets of baking paper until it's 5mm thick. Peel off the top layer of baking paper. Use cardboard cut-outs to cut out shapes from the dough. Arrange the gingerbread in a single layer on baking trays and freeze for 15 minutes until firm.
  • Preheat your oven to 180°C. Line 4 baking trays with baking paper and evenly place the gingerbread on them. Bake two trays at a time for 15 minutes until the gingerbread is firm. Let them cool on the trays.
  • Create royal icing: Whip egg whites in an electric mixer until soft peaks form, then gradually incorporate icing sugar while continuing to beat until thick and smooth.
  • Join walls together using icing and support them with unopened cans of food until the icing dries. Attach the roof to the walls with icing and use cans to support it until the icing is completely dry to prevent slipping.
  • Transfer half a cup of the leftover icing into a sealable plastic bag. Cut a small hole in the corner of the bag and use it to pipe windows and doors on the house, as well as frost the edges of the roof. Let it dry. Put the rest of the icing into another sealable plastic bag. Add a bit of icing to the back of each candy and stick them onto the house for decoration. Sprinkle some icing sugar on the roof.
