Enlist helpers to create a vibrant gingerbread house.
Ingredients:
  • 1 quantity Basic Gingerbread biscuit (see notes)
  • Coles 100's & 1000's
  • Coles Sour Rainbow Lollies
  • 10 Mars M&M's
  • 1 Free Range Egg white
  • 5.30 gm lemon juice
  • 240g icing sugar
Instructions:
  • Preheat your oven to 180C. Prepare 2 large baking trays with baking paper. Divide the gingerbread dough into 6 portions.
  • Roll out one portion of gingerbread on a lightly floured surface to a 4mm-thick disc and cut a 12cm x 13cm rectangle. Place on a lined tray. Repeat with the second portion. Use a 3cm heart cutter to cut 2 hearts from each wall for windows and place them on the tray.
  • Roll out the second gingerbread portion on a floured surface to create a 4mm-thick disc. Cut a 13cm x 15cm rectangle and place it on the tray. Repeat this step with the last gingerbread portion.
  • Roll out the remaining 2 portions of the dough on a lightly floured surface to create a 4mm-thick disc. Cut each into a 12cm x 11cm square with a 9cm-long triangle on the end for the roof. Place them on a lined tray. Use a heart cutter to make windows on each wall. Cut a door out of the front wall and add it to the tray along with the hearts.
  • Bake gingerbread until golden brown and cooked through, for about 15-20 minutes. Allow to cool completely on trays.
  • Combine egg white and lemon juice in a bowl, whisking until frothy. Gradually mix in icing sugar, stirring well after each addition, until a smooth and thick paste forms. Add more icing sugar if needed for desired consistency.
  • Spread a thin layer of icing evenly on the roof pieces. Pour 100’s & 1000’s onto a plate. Dip the icing-side of the roof pieces in the 100’s & 1000’s to coat evenly. Allow the decorations to set.
  • Decorate the walls by spreading icing on each wall. Place sour straps across the walls and use a heart cutter to make windows. Fill a piping bag with 2mm plain nozzle with icing and pipe around the windows and door. Let it set.
  • Using icing, generously decorate heart shapes and the door, then sprinkle with colorful 100’s & 1000’s for a delightful finish.
  • Spread a thin layer of icing on the edges of the front, back, and side walls of the house. Carefully join the walls together with the help of a straight-sided glass for support. Allow it to set for 1 hour before proceeding.
  • Spread a thin layer of icing on the top edges of the walls and attach the roof pieces. Use a glass to support the bottom edge of the roof. Let it sit for 1 hour until fully set.
  • Using icing, attach the door to the front and pipe over the roof to create tiles. Secure M&M’s to the top with icing and then pipe snow on the top of the front and back walls. Cut the remaining sour strap into triangles using kitchen scissors and attach to the front wall with icing to make bunting. Allow it to set before continuing.
