Weekend brunch: Vegetarian crumpets with leeks, cheese, and poached eggs - simple and delicious!
Ingredients:
  • Fresh thyme leaves, to serve
  • 4 leeks, trimmed, tough outer leaves removed
  • 20g butter
  • 2 tsp mustard powder
  • Pinch of ground cloves
  • 20.00 ml white vinegar
  • 8 eggs
  • 80g (1 cup) coarsely grated gruyère
  • 500ml (2 cups) milk, warmed
  • 2 tsp (7g sachet) dried yeast
  • 5.00 gm caster sugar
  • 60g butter
  • 300g (2 cups) bread and pizza plain flour
  • 2.40 gm sea salt
Instructions:
  • In a bowl, mix together milk, yeast, sugar, and 20g of butter. Let it sit for 5 minutes until it's frothy and the butter is melted.
  • In a large bowl, mix flour, salt, and bicarbonate of soda. Create a well in the center and pour in the yeast mixture. Whisk with a balloon whisk until fully combined. Allow the mixture to sit for 2 hours or until it becomes very bubbly.
  • Preheat a non-stick frying pan over medium-high heat. Place a 10cm round cutter in the pan and add a bit of the remaining butter inside it to melt. Pour 1⁄3 cup of the batter into the ring. Cook for 6-8 minutes until bubbles appear on the surface and the top forms a skin. Remove the ring, flip the crumpet, and cook for 1 minute until golden. Place on a baking tray, cover with foil to keep warm. Repeat with the rest of the batter and butter to make 8 crumpets.
  • Place half of the leeks on a microwave-safe plate and microwave on High for 4 minutes until tender. Cut into 1cm slices and transfer to a bowl. Repeat with the remaining leeks. Add butter, mustard powder, and cloves to the leeks. Toss until the butter melts. Cover to keep warm.
  • In a saucepan, combine vinegar with water and bring to a boil. Crack 1 egg into a small bowl. Use a spoon to create a whirlpool in the water and gently slide the egg into the center. Poach for 2 minutes for a soft egg. Place on a paper towel-lined plate. Repeat with remaining eggs.
  • Start by heating up the grill to high. Next, layer the crumpets with the flavorful leek mixture and eggs. Sprinkle delicious cheese on top. Grill for 3-4 minutes until the cheese is melted and golden. Finish off by sprinkling some fresh thyme before serving.
