Ingredients:
  • 4 mini candy canes
  • 5 malt stick lollies
  • 51 green M&M’s minis
  • 2 x 380g packets M&M's (see notes)
  • 9 x 17.5cm long red candy poles
  • 19 red and white starlight mint pinwheels
  • 3 sweet strawberry bricks, thinly sliced
  • 2 yellow jubes, halved horizontally
  • 1 green and white marshmallow twist
  • 30g Flake chocolate bar
  • Icing sugar, for dusting
  • 937.50 ml plain flour, plus extra for dusting
  • 135.00 gm brown sugar, firmly packed
  • 3.75 gm bicarbonate of soda
  • 7.50 gm ground ginger
  • 3.75 gm ground cinnamon
  • 150g butter, chopped
  • 167.50 gm golden syrup
  • 1 egg
  • 20.60 gm milk
  • 2 egg whites
  • 450.00 gm pure icing sugar, sifted
  • 10.60 gm lemon juice
Instructions:
  • Prepare Gingerbread Dough: Combine flour, sugar, bicarbonate of soda, ground ginger, cinnamon, cloves, and butter in a food processor. Pulse until mixture resembles fine breadcrumbs. Add syrup, egg, and milk and pulse until dough forms. Turn dough onto a lightly floured surface and knead until smooth. Divide dough into 3 discs, wrap in plastic wrap, and refrigerate for 30 minutes.
  • Preheat the oven as instructed and line 2 large baking trays with baking paper. Roll out one dough disc between two sheets of baking paper until it is 5mm thick. Place the 'Front and Back' template on the dough and cut around it to form the front of the house. Cut out a rectangular door shape from the front piece and a round window using a 3cm cutter. Re-roll any trimmings. Repeat the process for the back piece. Refrigerate the dough on trays for 10 minutes until firm. Bake for 12-15 minutes until golden and firm. Allow the gingerbread to cool on the trays for 10 minutes before transferring to a wire rack to cool completely.
  • Roll out the second dough disc and use the 'Wall' template to cut out two wall pieces. Then, with a 4.5cm heart-shaped cutter, cut out a heart from the center of each wall to create a window.
  • Use the remaining dough disc and the ‘Roof’ template to cut out 2 roof pieces from the dough.
  • Whisk foamy egg whites in a small bowl. Add icing sugar gradually, whisking until smooth. Stir in lemon juice.
  • Transfer the Royal Icing into a snap-lock bag and snip off a corner. Pipe icing along the base and side edges of the first wall. Stand it upright on a cake board with the help of a small glass. Pipe icing along the base and sides of the front of the house, then stand it upright on the board and attach it to the wall with the help of another glass. Repeat this process with the other walls to form the house. Let it stand for 1 hour until the icing has set, then carefully remove the glasses.
  • Carefully apply icing along the top edges of the walls. Position one roof panel onto the house so the bottom slightly overlaps. Use a glass for support under the eaves and hold it in place to secure. Add icing along the top edge of the roof panel. Position the remaining roof panel onto the house using a glass for support and hold it in place to secure. Let it stand for 2 hours or until set.
  • Use picture as a guide to attach malt sticks and 1 M&M’s mini to the front door using icing. Set aside without attaching to the house. Use picture as a guide to attach M&M’s to the roof with icing. Pipe icing along the top of the roof and attach 1 red candy pole, holding until secure. Attach 4 red candy poles to the corners of the house with icing, trimming to fit. Secure by holding. Attach the remaining red candy poles to the base of the house, trimming to fit. Attach 2 candy canes around each heart-shaped window with a little icing. Secure by holding. Attach 10 starlight mint pinwheels to the house using icing. Hold until secure. Attach 2 strawberry brick pieces to the front and 3 to the back of the house for windows, following the picture as a guide. Attach jubes to the front and back of the house as shown in the picture. Hold until secure. Attach the remaining green M&M’s minis to the house using icing. Pipe a frame around the door with icing and attach it to the front of the house as shown in the picture. Attach a green marshmallow to the roof as a chimney following the picture as a guide. Hold until secure. Pipe icing along the edges of the roof for icicles. Arrange the remaining starlight mint pinwheels in front of the house to create a path, following the picture as a guide. Cut the Flake into pieces to resemble logs and stack them in front of the house. Dust the house with icing sugar to create a snowy effect. Serve and enjoy!
