Indulge in festive ice cream sandwiches with gingerbread and let the kids join in on the fun decorating.
Ingredients:
  • 2L vanilla ice-cream, slightly softened
  • Gingerbread biscuit dough (use your favourite recipe or see note)
  • Bought caramel sauce, to drizzle
Instructions:
  • Spread the ice-cream in a 21 x 31cm Swiss roll pan and make the surface smooth. Freeze for 4 hours or overnight until firm.
  • Cut out 8 gingerbread man shapes using a 12cm-high cutter. Bake following the recipe instructions and allow them to cool completely.
  • Cut out 4 shapes from the ice-cream using the same cutter. Sandwich each ice-cream shape between 2 biscuits and drizzle with caramel sauce.
