Make ahead frozen ice-cream pudding with layers of ice-cream, sorbet, and biscuits for an indulgent treat.
Ingredients:
  • 1L vanilla ice-cream
  • 500ml mango sorbet
  • 500ml mixed berry sorbet
  • 200g pkt ginger sponge kisses
  • 125ml (1/2 cup) Cottee’s Ice Magic White Choc topping
  • 1 mango, thinly sliced
  • 125g strawberries, halved
  • 125g raspberries
  • 80g (1/2 cup) macadamias, toasted, coarsely chopped
  • 155g (3/4 cup) caster sugar
  • 125ml (1/2 cup) cold water
Instructions:
  • Prepare a 2L (8 cup) pudding basin or mixing bowl by lining it with a double layer of plastic wrap, making sure to leave extra hanging over the sides. Blend the ice-cream in a food processor until smooth and creamy like soft-serve. Transfer the ice-cream back into its container and freeze. Repeat the same process with each sorbet using a clean food processor, one by one.
  • Layer the soft-serve ice cream and sorbet alternately in a prepared basin until filled. Ensure they are of a thick consistency. Smooth the surface. Halve the ginger kisses and layer them over the ice cream mixture, cream-side down, trimming to fit gaps and cover the base fully. Cover with plastic wrap, ensuring it overlaps. Freeze for 8 hours or overnight until firm.
  • Prepare a baking tray lined with parchment paper. Spread macadamia nuts evenly on the tray. In a saucepan over medium heat, combine sugar and water, stirring until dissolved. Allow the mixture to come to a boil and cook without stirring for 8-10 minutes until it turns golden in color. Quickly pour the hot syrup over the macadamia nuts to create a thin layer. Let it sit for 15 minutes until it sets. Break the praline into shards before serving.
  • Transfer the pudding onto a beautiful serving stand or plate. Gently use a palette knife to create a smooth finish on the sides. Place it back in the freezer for 1 hour or until you're ready to enjoy it.
  • Drizzle topping over and garnish with praline, mango, strawberry, and raspberries before serving.
