Raspberry and mango salsa

Savor succulent ham topped with tangy raspberry mango salsa.
Ingredients:
  • 40.00 ml white balsamic vinegar
  • 4 mangoes
  • 250g raspberries
  • 3 green onions, thinly sliced
  • 82.50 ml fresh basil leaves
  • Sliced leg ham, to serve
Instructions:
  • In a small bowl, combine vinegar and oil, then season with salt and pepper.
  • Peel the mangoes, remove the cheeks, and dice them into 1cm pieces. Remove the remaining flesh from around the mango stones, dice it into 1cm pieces, and discard the stones.
  • Combine mango, raspberries, onion, and basil in a bowl. Drizzle with dressing and toss gently to mix. Serve with ham.
