Gingerbread S'mores Muffins

S'mores-inspired gingerbread muffins with gooey marshmallows and chocolate chips.
Ingredients:
  • 2 cups light molasses
  • 2 cups brewed coffee
  • 2 eggs, lightly beaten
  • 5.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons ground allspice
  • 0.5 teaspoon ground nutmeg
  • 1 cup shortening
  • 1 cup white sugar
  • 2 teaspoons vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 cup miniature marshmallows
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare 36 muffin cups by greasing and flouring them.
  • Combine molasses, coffee, and eggs in a bowl and blend until smooth.
  • In a medium bowl, mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg, and salt until well combined.
  • Using an electric mixer, whip shortening and sugar until creamy. Slowly combine coffee mixture and flour mixture into the bowl, alternating between each addition and mixing well. Add vanilla extract, then gently fold in chocolate chips and marshmallows.
  • Spoon batter into muffin cups, filling them 3/4 full.
  • Bake in the oven until a toothpick inserted in the center comes out clean, around 20 minutes. Allow to cool for 10 minutes before serving.
