Fluffy pancakes filled with peanut butter, ginger, and cinnamon, topped with crushed ginger snaps for added crunch and served with maple syrup.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.25 cups whole milk
  • 0.25 cup crushed gingersnap cookies
  • 3 tablespoons creamy peanut butter
  • 3 tablespoons butter, melted
  • 1 tablespoon baking powder
  • 1.5 teaspoons ground ginger
  • 0.75 teaspoon ground cinnamon
Instructions:
  • Combine flour, milk, gingersnaps, peanut butter, butter, sugar, egg, baking powder, ginger, salt, and cinnamon in a bowl and whisk until a smooth batter forms.
  • Preheat a lightly oiled griddle over medium-high heat. Pour 1/2 cup of batter onto the griddle and cook until bubbles appear and the edges are dry, about 3-4 minutes. Flip and cook until golden brown on the other side, approximately 2-3 minutes. Repeat with the rest of the batter.
