Spicy peach sauce enhances glazed ham for a flavorful holiday feast. Adjust ginger and hot pepper to suit your preference.
Ingredients:
  • 1 (10 pound) fully-cooked, bone-in ham
  • 2 teaspoons whole cloves
  • 0.25 teaspoon ground cinnamon
  • 2 tablespoons brown mustard
  • 0.5 cup packed brown sugar
  • 0.25 cup packed brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 cup peach nectar
  • 1 cup peach preserves
  • 5 cups frozen peach slices
  • 2 teaspoons minced fresh ginger root
  • 1 hot cherry pepper, seeded and minced
  • 1 (3 inch) cinnamon stick
Instructions:
  • Preheat the oven to 325°F (165°C). Score the top of the ham in a diamond pattern using a serrated knife. Insert whole cloves into the ham and then transfer it onto a roasting rack in a roasting pan.
  • Roast in the preheated oven for 1 1/2 to 2 hours until the ham reaches an internal temperature of 140°F (60°C), covering with foil if needed to prevent drying out.
  • While the ham bakes, combine cinnamon, mustard, and 1/2 cup of brown sugar in a cup or small bowl. Set aside. In a saucepan over medium heat, mix the rest of the brown sugar, cider vinegar, peach nectar, and peach preserves. Boil, then add sliced peaches, ginger, cherry pepper, and cinnamon stick. Simmer until peaches are tender and sauce thickens, about 25 to 30 minutes.
  • Take the ham out of the oven, generously brush it with the mustard glaze, then raise the oven temperature to 350°F (175°C) and place the ham back in the oven, uncovered.
  • Continue baking until the glaze is bubbly, about 20 to 30 minutes more. Rest the ham for 15 to 20 minutes before carving. Serve with warm Peach-Ginger sauce.
