Ingredients:
  • 60ml (1/4 cup) Sushi & Sashimi Soy Sauce
  • 20.00 gm Mirin Seasoning
  • 40.00 ml Cooking Sake
  • 32.00 gm brown sugar
  • 500g boneless and skinless salmon fillets, cut into 3cm cubes
  • Toasted sesame seeds, to serve
  • 2 x 150g pkts Ramen Noodles
  • 200g red cabbage, finely shredded
  • 2 green shallots, thinly sliced diagonally
  • 145g (1 cup) frozen edamame beans, thawed
  • 20.00 ml Sushi & Sashimi Soy Sauce
  • 2 tsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 tsp grated fresh ginger
Instructions:
  • Combine soy sauce, mirin, sake, and sugar in a jug, stirring until sugar dissolves. Set aside half of the marinade. Place salmon in a glass bowl, add the remaining marinade, and toss to coat. Cover and refrigerate for 1 1/2 hours.
  • Separate noodles by rinsing them under cold water. Place them in a heatproof bowl and cover with boiling water for 1 minute. Drain and rinse under cold water again. Combine cabbage, shallot, edamame, and noodles in a large bowl. In a separate jug, whisk together soy sauce, vinegar, sesame oil, and ginger. Pour the dressing over the salad and mix well. Let it sit to enhance the flavors before serving.
  • Preheat the grill on high while placing the salmon on a foil-lined baking tray. Grill for 12-15 minutes, making sure to turn and brush the salmon with the reserved marinade halfway through cooking, until it's charred and cooked through to perfection.
  • Portion the noodle salad onto individual serving plates. Arrange the salmon on top and garnish with a sprinkle of sesame seeds before serving.
