Glazed pear and goat's cheese salad

Create a unique salad by caramelizing pears with port, balsamic, and vanilla.
Ingredients:
  • 20g butter
  • 4 slices prosciutto
  • 2 Williams pears, cored, cut into wedges
  • 20.00 ml port
  • 1/2 tsp vanilla bean paste
  • 40.00 ml balsamic vinegar
  • 50g baby rocket leaves
  • 50g baby spinach leaves
  • 2 spring onions (shallots), thinly sliced
  • 100g goat's cheese, crumbled
  • 70g (1/2 cup) pecans, toasted, chopped
  • 18.20 gm extra virgin olive oil
Instructions:
  • In a non-stick frying pan over medium-high heat, sizzle prosciutto slices in olive oil for 1-2 minutes per side until golden and crispy. Drain on paper towels, then crumble into shards.
  • 1. Melt butter in a frying pan over medium-low heat. Sauté the pears, turning occasionally, for 6 minutes until golden. 2. Mix port, vanilla, and half the vinegar in a small bowl. Pour over pears in the pan. Cook, turning pears to coat, for 2 minutes until the glaze becomes thick. 3. Remove pan from heat.
  • Place rocket, spinach, and spring onion on a platter. Layer with pears, goat’s cheese, pecans, and prosciutto. Mix extra virgin olive oil and the remaining glaze from the pan. Drizzle the mixture over the salad.
