Globe artichokes with tomato vinaigrette

Ingredients:
  • 1 lemon, quartered
  • 4 (200g each) globe artichokes
  • 56.88 gm olive oil
  • 40.00 ml red wine vinegar
  • 1 garlic clove, crushed
  • 2 medium tomatoes, deseeded, chopped
  • 20.00 ml chopped fresh basil leaves
Instructions:
  • - Fill a large bowl with cold water and squeeze lemon juice into it. - Add lemon wedges to the water. - Trim the stem of an artichoke and remove outer leaves. - Cut off the top third of the artichoke and use a teaspoon to remove the inedible 'choke' from the center. - Place the prepared artichoke in the lemon water. - Repeat the process with the remaining artichokes.
  • 1. Boil a large saucepan of water over high heat. 2. Add artichokes to the pan, discarding the liquid. 3. Simmer with the lid partially covering for 15-17 minutes until tender. 4. Using a slotted spoon, remove artichokes from the water and place them on plates. 5. Gently open the artichokes before serving.
  • In a bowl, combine oil, vinegar, and garlic. Add tomato and basil, then season with salt and pepper. Spoon mixture over artichokes and serve.
