Indulge in nutty globe artichokes with cannellini beans and thyme breadcrumbs in baked dish.
Ingredients:
  • 1 lemon, halved
  • 4 globe artichokes
  • 1 brown onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 2 garlic cloves, crushed
  • 255.00 gm salt-reduced chicken stock
  • 125.00 gm dry white wine
  • 400g can Brand Cannellini Beans, rinsed, drained
  • 250.00 ml panko breadcrumbs
  • 20.00 ml chopped thyme
  • Flat-leaf parsley leaves, to serve
  • Pan-fried Australian salmon fillets (optional), to serve
Instructions:
  • Preheat your oven to 200C (180C fan-forced). Squeeze the juice of half a lemon into a large bowl of cold water. Trim the stems of the artichokes, then cut 3cm from the top of each artichoke. Rub the cut sides with the remaining lemon half. Remove and discard 2 layers of outer petals until the pale petals are exposed. Use a teaspoon to scoop out and discard the furry choke from the center of each artichoke. Place the prepared artichokes in the lemon water. Repeat with the remaining artichokes.
  • In a large saucepan, cover artichokes with cold water and bring to a boil over high heat. Cook for 15 minutes or until tender. Drain thoroughly.
  • In a large frying pan over medium heat, heat half of the oil. Sauté the onion, carrot, celery, and garlic for 5 mins until the onion softens. Pour in the stock and wine, bring to a boil, then remove from heat. Gently stir in the beans and season to taste.
  • Spread half of the bean mixture on the bottom of a 2L dish, layer with the artichokes, and then cover with the rest of the bean mixture.
  • In a small bowl, mix together breadcrumbs, thyme, and remaining oil. Season with salt and pepper. Sprinkle the mixture over the beans. Bake for 20 minutes until golden brown and fully heated. Finish with a sprinkle of parsley and serve alongside pan-fried salmon, if desired.
