Baked artichokes with zesty herb butter - a delicious and easy side dish bursting with fresh flavors.
Ingredients:
  • 1 lemon, halved
  • 2 small artichokes
  • 1 teaspoon water
  • 1 teaspoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper, plus more for garnish
  • 1/4 cup butter
  • 1 clove garlic, grated
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Prepare the artichokes by trimming off 1 inch from the tips and cutting off the stems and sharp leaf tips. Slice the artichokes in half lengthwise and remove the chokes with a spoon. Rub the cut sides with a lemon half and cut the remaining lemon into wedges. Drizzle the cut sides of each artichoke half with water and extra-virgin olive oil, then sprinkle with salt and black pepper.
  • Slice the remaining lemon into 4 pieces. Place a lemon slice on top of each artichoke half and tightly wrap them in foil. Arrange the foil packets in a baking pan and bake for about 45 minutes until the artichokes are tender at the base.
  • In a small saucepan, gently melt butter with garlic over low heat. Add parsley and stir. Serve artichokes with lemon wedges and herb butter, then sprinkle with pepper.
