Golden brown baked artichokes stuffed with flavorful onions, cheese, breadcrumbs, and herbs.
Ingredients:
  • 4 medium artichokes
  • 1 lemon, cut in half
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped (1/4 cup)
  • 4 cloves garlic, finely chopped
  • 2 tablespoons butter, melted
  • 1/2 cup Progresso™ plain bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon dried basil leaves
Instructions:
  • Clean the artichokes by removing any discolored leaves and trimming the stems even with the base. Cut 1 inch from the tops, discard them, and use kitchen scissors to trim the tips off the leaves. Rinse the artichokes with cold water.
  • Fill a large saucepan or Dutch oven with 1/2 inch of water and place a steamer basket inside (water should not touch the bottom of the basket). Add artichokes to the steamer basket and squeeze lemon over them before placing the lemon halves in the basket. Cover tightly and bring to a boil. Reduce heat to low and steam for about 30 minutes or until the bottoms are tender when pierced with a fork. Remove artichokes from the basket and let them cool for 15 minutes before serving.
  • Preheat oven to 400°F. In a small skillet, warm oil over medium heat. Sauté onion and garlic until tender. Mix this with butter, bread crumbs, cheese, oregano, and basil in a small bowl until well combined.
  • Prepare artichokes by carefully removing the center leaves and choke. Fill the center and some side leaves with the desired filling. Arrange on a baking sheet.
  • Bake until golden brown, then allow to cool for 5 minutes before serving.
