Prosciutto-stuffed artichokes

Elevate artichokes with a gourmet twist: stuffed with savory prosciutto.
Ingredients:
  • 2 globe artichokes
  • 1 lemon, juiced
  • 40.00 ml fresh breadcrumbs
  • 40.00 ml finely grated parmesan
  • 20.00 ml chopped fresh oregano
  • 2 slices prosciutto, chopped
  • 80ml (1/3 cup) white wine
  • 18.20 gm olive oil
  • Lemon zest, to serve
  • Fresh oregano leaves, to serve
  • Extra virgin olive oil, to serve
Instructions:
  • Prepare the artichokes by trimming the stems to 3cm, cutting 2cm from the top of the leaves, peeling 2 layers of outer leaves until pale leaves are exposed, discarding the outer leaves, and scooping out and discarding the choke from the center. Place the prepped artichokes in a bowl of water with lemon juice.
  • Preheat your oven to 180°C. Mix breadcrumbs, parmesan, oregano, and prosciutto in a bowl. Fill artichoke leaves with the crumb mixture. Place in a baking dish, pour wine and olive oil over them, then cover with foil. Bake for 20-25 minutes until tender. Sprinkle with lemon zest, oregano, and a drizzle of extra virgin olive oil.
