Prosciutto-stuffed potato bake

Indulgent Parmesan potato bake stuffed with crispy prosciutto.
Ingredients:
  • 450ml pouring cream
  • 185ml (3/4 cup) milk
  • 2kg potatoes, peeled, thinly sliced lengthways
  • 1 small brown onion, halved, thinly sliced
  • 100g prosciutto, halved lengthways
  • 20g (1/4 cup) finely grated parmesan
Instructions:
  • Preheat your oven to 170C/150C fan forced, then mix the cream and milk in a jug, seasoning generously.
  • Place the potato slices vertically in rows at the base of a 6cm-deep, 4L round ovenproof baking dish. Nestle the onion slices amongst the potatoes. Drizzle the cream mixture over the top.
  • Cover the dish with foil and bake on a tray for 1 1/2 hours, or until the potato is tender.
  • Preheat the oven to 180C/160C fan forced. Uncover the potato bake, weave prosciutto between potato slices, sprinkle with parmesan, then bake for 1 hour until golden and tender.
