Make cheesy, crispy stuffed artichokes for ultimate comfort and indulgence – it's easy!
Ingredients:
  • 3 large artichokes
  • 8 oz Brie cheese, rind removed, cut into chunks
  • 1/3 cup heavy whipping cream
  • 1 egg yolk
  • 1/2 cup grated Parmesan cheese
  • Pepper
  • 1/3 cup Progresso™ plain bread crumbs
  • 2 tablespoons butter
  • 1 teaspoon dried thyme leaves
Instructions:
  • Bring a large pot of salted water to a boil. Trim off and discard the top one-third of the artichokes. Add artichokes to the boiling water and cook for 10 minutes. Drain them upside down in a colander.
  • Prepare the pie plate by greasing or spraying it. Stand the artichokes upright in the pie plate, making sure to trim the ends if necessary for them to sit flat.
  • In a small saucepan, gently warm the Brie and cream until velvety. Remove from heat, whisk in egg yolk and 1/4 cup Parmesan cheese. Season generously with pepper while stirring continuously.
  • Preheat your oven to low broil with the rack positioned near the bottom.
  • Stuff artichokes generously with creamy cheese sauce, making sure to cover the tops and get it in between the leaves for maximum flavor.
  • Combine the remaining 1/4 cup Parmesan cheese with bread crumbs, butter, and thyme in a medium bowl. Sprinkle this mixture over the tops of the artichokes.
  • Broil until beautifully golden, watching closely, for 3 to 5 minutes.
